Quesadilla Burger with Grilled Corn Salsa


Last week Andy and I made an amazing meal … Quesadilla Burgers!  I found a recipe, but change it a bit to satisfy our palates.  I thought (since I haven’t posted a kitchen success story in awhile) to share it with my readers, see below. 


For Patties

2 pounds ground chuck
1/2 cup black beans
1/2 cup chopped cilantro leaves
1/2 cup grated onion
2 garlic cloves, pressed
2 chipotle peppers in adobo sauce
1/2 tablespoon ground cumin
salt and pepper to taste

Combine beef, beans, cilantro, onion, garlic, peppers, cumin, salt and pepper in a large bowl.  Mix with hands and shape into six small patties.  Loosely cover with plastic wrap and set aside.

Grilled Corn Salsa

1 grilled ear of corn, cut off cob when cooled
1/4 cup red onion, diced
1 red and green pepper, diced
1 jalapeño, diced
2 tablespoons fresh cilantro, roughly chopped
2 tablespoons chicken stock
1/2 teaspoon ground cumin
dash of hot sauce
salt and pepper to taste
6 large tortillas
6 slices queso fresco cheese

In a medium bowl, combine red onion, red and green pepper, jalapeño, cilantro, chicken stock, cumin, hot sauce, salt and pepper.  Cut corn off of cob and toss with mixture.  Set aside.

Place patties on grill and cook, turning once, until done to preference (about 5 to 7 minutes on each side for medium).  

On each flour tortilla, layer burger, queso fresco, and an equal amount of corn topping, fold in sides of tortilla like a burrito securing with toothpicks.  Place pocket on grill again with a little oil until tortilla is golden brown and crispy.

Cut in half diagonally. Garnish with cilantro leaves, sour cream, salsa  … whatever your heart desires.  Yum!!
