Kitchen Success

I had nothing in the house this afternoon for lunch, but did have some veggies and tortilla shells. I searched online for a veggie wrap recipe, but didn’t find anything that sounded appetizing. So … I took it upon myself to create something delicious!  Due to popular demand I’m posting the recipe here – Enjoy!

Grilled Veggie Wrap with Spicy Avocado Dressing

1 -2 tbs olive oil
4 cloves of garlic, minced
¼ red onion, strips
¼ red pepper, strips
¼ green pepper, strips
1 jalapeño, chopped
1 tomato
pepper jack cheese
tortilla shell

¼ cup mayo
2 tablespoons sour cream
¼ of an avocado
adobo pepper in chipotle sauce (you’ll just use some of the sauce)
salt and pepper to taste

Heat a frying pan with approximately two tablespoons of olive oil on medium heat. Add cloves of garlic and onion, cook until tender about 10 minutes. Then add peppers and jalapeño and cook for about 5 minutes, turn heat on low. 

Mix mayo and sour cream in a small dish with avocado and the sauce from the adobo peppers. (If you want like spicy add more sauce or chop one or two of the peppers and fold into dressing.) 

Spread dressing on tortilla, add onion mixture, and top with shredded pepper jack cheese and tomatoes. YUM! 

I had a bag of frozen sweet potato fries (Alexis) in the freezer and mixed mayo and the adobo peppers in a small dish for a dipping sauce – I could have tried the dressing I made for the wraps, but didn’t think about that until right now …  hmmm

This made only one wrap due to the lack of food in my house, but boy was it yummy!!
